Sides made easy

Hi everyone,

This week I wanted to talk about some easy and delicious side dishes. While I did make these for my 4th of July party and they seem more geared towards summer, they are perfect for any time of the year. The first is a bean salad.

What you need:

1 jar or can of artichoke hearts (depends on your preference)

1 jar or can of mushrooms

1 can of black olives

1 can of garbanzo beans

1 can of waxed beans

1 can of green beans

1 can of baby corn

1 can of black beans

1 container of shredded parmesan, romano and asiago cheese

2 cups of Italian dressing

What you do:

Step 1: Drain all of the jars/ cans, especially the black beans

Step 2: Cut the baby corn into pieces

Step 3: Put everything, except the dressing and cheese, into a container. For best results, do it the night before.

Step 4: The day of serving, 2 to 3 hours before, add the dressing and put back in the fridge

Step 5: Right before serving add the cheese and gently mix.

Next up we have two dips. The first is a delicious Mexican dip.

What you need:

2 cans of Frito bean dip

3 ripe avocados

Lemon juice

1 container of sour cream (8 ounces)


1 pack of taco seasoning

2 cans of small black olives

1 tomato

1 bunch of green onions

Cheddar cheese

What you do:

This is a layer dip, but before you layer there’s a couple things you need to do. First is combine the 3 mashed avocados, 2 teaspoons of lemon juice, 1 container of sour cream, 1/2 cup of mayonnaise, and the taco seasoning. Now for the layering, on the bottom you put the 2 cans of Frito bean dip, then the avocado mixture, the chopped black olives, chopped tomato, cut green onions, and on top you put the grated cheddar cheese.

And lastly we have two versions of a very simple and very delicious dip.

What you need (version 1):

1 container of cottage cheese (24 ounces)

1 container of sour cream (8 ounces)

1 packet of dill seasoning mix

What you do:

Throw all of it into a container, mix very well and serve

What you need (version 2):

1 container of cottage cheese (24 ounces)

1 container of sour cream (8 ounces)

1 packet of Hidden Valley Ranch seasoning mix

1 pack or jar of bacon bits

What you do:

Throw it all into a container, mix very well and serve
